(trout) is the brainchild of the maverick Austrian Chef and co-owner, Sepp Schellhorn, who has a deep passion for creating a palette that is distinguishable, regional, responsible and innovative, yet authentic and familiar.
He coined the r120 add-on to the restaurant name - in his words "this is a philosophy where everything homeland comes onto the table."
Together with his sons, Felix and Johannes Schellhorn, also hot talents on the gastro scene, they pioneered the concept of sourcing the tastiest regional food to a radius of 120km from Der Seehof.
From the breakfast table through to light lunches out on the sunny lakeside terraces and to dinner - all the products were sourced by his team: "the fish is wild freshwater fish and the meats are used as a whole animal - using everything from the nose to the tail".
