What should be considered when combining a wine with a dish?
Combining a wine with a dish has no rules, and yet it depends on many things. First, the type of pairing must be decided – whether it is to be by contrast, by similarity or by geographical proximity, but a true harmonization of a wine and dish will always seek a fusion of flavours, sensations and textures.
How do you do this at Roca Moo?
At Roca Moo - just as in El Celler de Can Roca restaurant - many times a dish is inspired by a wine itself, so the pairing happens naturally. For example, on the Roca Moo menu you might see Riesling oyster, pigeon with Palo Cortado or Cariñena lamb.
How many wines does Roca Moo's restaurant hold?
We have a very large selection of wines at Hotel Omm, with over 500 red and white varieties coming from producers in Catalonia and the rest of Spain, especially the Priorat, Rioja and Ribera del Duero regions. We also have almost all of the Catalan and Spanish cava and champagne producers in our winery, and there is a special portion of the cellar dedicated to wines from Germany, particularly the Riesling, as it is a passion of Josep Roca.
Does Roca Moo have a preferred taste on their wine list?
At Roca Moo we do have a special passion for wines that come from Jerez de la Frontera or Sanlúcar de Barrameda, as we store varieties such as “manzanilla” (dry sherry), “finos” (fine), “palos cortados” and “olorosos”, all of which matured in that zone.
What are the main characteristics of a standard Roca Moo wine?
Above all, we value the respect that the winemakers have when producing their wine; that is, respect to their land, their vineyard, and how their wine vinifies until the final moment of bottling.
Which Roca Moo wine is the most appreciated by diners?
We have a very extensive wine list and it seems impossible to choose just one… Each wine has its value and its peculiarity, defined by the region where it comes from and, or, by the producer that lies behind it. However, we do hold great jewels like L’Ermita de Alvaro Palacios, Petrus and Château Mouton Rothschild, among others.
