It is un-deniable: those behind Arthotel Blaue Gans in Austria's city of Salzburg definitely know a thing or two about taking something ancient, like the Goose Feast of St Martin, nurturing it and giving it the foodie respect it deserves, and then creating something truly wonderful out of it.
Playing host to the past, hertitage and tradition is part of their dna for the owners of Arthotel Blaue Gans - just as they did with the original hotel building itself in old-town Salzburg.
Dating back to 1350, Arthotel Blaue Gans is the oldest inn in Salzburg, and has been updated with an explosion of considered design, over 120 one-off artworks and a true eye for style.
They have now turned their attention, however, to an age-old November tradition particularly famous in Austria - Martini Gans. A day of celebration in which you roast and enjoy Saint Martin’s Goose.
Updated specially for Arthotel Blaue Gans, their chef, also mysteriously called Martin, has created a bespoke menu cleverly called Martini Blù, which will get your beaks all a-quiver with excitement.
Abiding by his motto to create food that is ‘simply quality, compelling simplicity’ , Martin the chef – who has long been a strong advocate of the ‘Nose to Tail’ approach, has created a five-course menu using every aspect of this spectacular bird.
For this traditional foodie feast of Martini Goose, the Blaue Gans cooks up gastronomic treat; from a fantastically flavourful homemade Ganslsalami with onion confit to start, to the originally devised crème brûlée of foie gras with pumpkin, Chef Martin leads you on to the classic soup dish of Gansleinmachsuppe with brandy and goose heart Ravioli, before the ultimate classic of fried Weidegans with bread dumplings, red cabbage, cranberries and his own twist of candied grapefruit. These are the flavours of Austria's foodie heaven on a plate. Guten Appetit.
Finish the night of St Martins off with a chocolate nut soufflé and a shot of special barrel-aged tequila, fragrant with the scent and taste of cinnamon, caramel and clove; Arthotel Blaue Gans offer you a delicious, fulfilling foodie journey of an evening, and will have you singing your way up to bed.
