Born of successful true foodie, chef and co-owner, Sepp Schellhorn, HECHT! and Der Seehof create an atmosphere of friendly calm and familiarity. This is built upon the fact that their buildings have existed in the same, small Austrian hamlet for over 300 years, and have been in the same family for generations.
In honour of sticking to these special and firmly established roots, and in honour of the stunning produce found locally in the surrounding Austrian countryside, HECHT! is renowned for sourcing all its produce from a radius of 120km. In doing so, it embraces its idyllic environment to the full, and has added the tag, r120, to its name.
Surrounded by forests full of fruit and herbs and fresh water streams full of wild fish, HECHT! chefs, Sepp and his son Felix, a highly trained and successful chef in his own right, seek out seasonal, immediately available and fresh food from their own doorstep. In an effort to be regional and responsible, they also ensure they leave nothing wasted; all meats are used as a whole animal, ‘everything from the nose to the tail’, all vegetables are grown in their garden, and they freshly bake all rye bread in their own wood ovens. Sustainable and delicious, this is Austrian foodie living at its finest.
